Baked salmon niçoise
- Half a pound of skinless salmon
- 1 garlic clove
- 1 bunch of green onions (about 5 strands)
- 1 small diced onion
- 2 tablespoons of mustard
- 6 small sweet bell peppers
- A tablespoon of jalapeño powder
- 2 carrots cut into rounds
- Juice from 1 lemon
- 4 tablespoons of soy sauce
- A pinch of salt
- A pinch black pepper
- 1 quarter pound of green beans
- 3 large potatoes cut into thick medallions
- 3 eggs boiled cut into rounds
- 1 pint of cherry tomatoes
- A handful of sweet pickle onions (optional)
- 1 large cucumber cut into small rounds
- 2 tablespoons of non-pareil capers
- 1 handful of olives
- A bunch of watercress
Basil dressing
- 1 bunch of fresh basil
- 1 piece of grated garlic
- 1 tablespoon of jalapeño powder
- Half a teaspoon of onion powder
- 3 tablespoons of raw honey
- 3 tablespoons of soy sauce
- 3 tablespoons of olive oil
- A pinch of salt and black pepper
Step 1: In a blender, mix the onions, garlic, jalapeño powder, sweet bell peppers. to form a wet rub. Incorporate the mustard, lemon juice, soy sauce, salt, black pepper and mix well.
Generously rub the mixture on the salmon and keep the remainder for future recipes.
Step 2: Spray a medium baking pan and lay the salmon pieces onto the pan and remember to scoop every last drop of the marinade and rub it back onto the fish. Pop it on the oven for 20 minutes at 400 degrees.
Step 3: In a boiling pot of water, add a pinch of salt, and parboil the green beans for 7 minutes.
In a different pot of water, add the potatoes and the eggs and a pinch of salt. Boil them until tender. After 8 minutes, transfer the green beans into a cold ice bath to shock them. This will stop the cooking process and make them crunchy. Sautée the carrots in a tablespoon of olive oil for 2 minutes, add a pinch of salt and pepper and set aside.
Step 4: basil dressing
In a blender, add the basil, onion powder, fresh garlic, jalapeño powder, honey, soy sauce, olive oil, salt and black pepper. Blend until smooth and set aside.
Using a platter, place the salmon in the middle just like a centerpiece. Arrange the veggies neatly on a circular way, and drizzle the basil dressing over everything including the salmon.
